These are a regular at our home. We usually add chocolate chips. 

3/4 cup milk
2 T white vinegar 
1 cup all-purpose flour
2 T white sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1 egg
2 T butter, melted
butter for hot pan or griddle
chocolate chips optional

1. combine milk with vinegar in a liquid measuring cup and let sit for 5 min.
2. meanwhile, combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
3. pour melted butter into the sour milk mixture. in another bowl, beat egg with a whisk. then combine the sour milk mixture to the egg and whisk together. 
4. pour egg and milk mixture onto the dry ingredients and whisk JUST until combined (****the key to great pancakes is NOT overmixing the batter!!!****). 
5. heat griddle to 350-375 or a pan on medium heat. when hot and ready, butter the pan/griddle and drop 1/3 cup of batter on the pan (note: batter will look puffy - that is normal - scoop it puffy and drop on the hot pan). drop chocolate chips on the pancakes if you desire (who wouldn't desire?!). flip with spatula and cook until brown on the other side.
6. freeze any leftovers and reheat in the microwave for 30 sec. when your kids ask for pancakes but you don't feel like making a whole batch.
